摘  要:利用从醇化红大烟叶表面分离的产蛋白酶及多糖酶的菌株RSCT26,通过形态学及ITS区同源性序列分析,将该菌株鉴定为链格孢属(Alternaria alternata)。对菌株RSCT26进行发酵,利用分光光度法测定蛋白酶及多糖酶酶活,并分离制成RSCT26菌剂。结果发现,RSCT26菌剂处理后烟膏中可溶性总糖、还原糖含量增加,总氮及蛋白质含量降低,致香成分总量显著增加。感官评价结果表明,RSCT26菌剂处理后再造烟叶产品杂气降低,刺激变小,香气质明显改善,香气量显著提升。RSCT26 strain producing protease and polysaccharidase was separated from the surface of alcoholized Hongda tobacco leaves. Through morphological method and ITS region homology sequence analysis, RSCT26 strain was identified as Alternaria alternata . RSCT26 strain was fermented and its protease and polysaccharidase activities were determined to produce RSCT26 preparation. The results indicated that the total amount of soluble sugar and reduced sugar content increased after treatment, and the contents of total nitrogen and protein decreased after treatment, and the total amount of aroma components significantly increased after treatment. The results of sensory evaluation showed that the offensive odor and irritancy of reconstituted tobacco after RSCT26 treatment reduced,aroma quality was obviously improved and aroma quantity obviously increased after RSCT26 treatment .
