摘  要:以栀子油为原料,采用顶空固相微萃取(SPME)技术萃取挥发性成分,并通过气相色谱-质谱法(GC-MS)对其成分进行鉴定。结果表明,SPME-GC-MS联用能较好分析栀子油的挥发性成分,鉴定出45种栀子油挥发性成分,其中22种成分具有天然植物香气,以异佛尔酮为代表的含有"-三甲基-环己烃-"结构的化合物有8种,初步判断为是形成栀子油特征风味的挥发性化合物。This paper analyzed the aromatic VOCs in the Gardenia fruit oil by SPME-GC-MS.Results showed that VOCs in Gardenia Fruit Oil could be determined by SPME-GC-MS,45 VOCs in the Gardenia fruit oil were marked,22 of them are the material of natural plant aroma,as exemplified by Isophorone,there were 8 compounds which contain‘-Cyclohex.ane-,-trimethyl-’group might be the characteristic aromatic VOCs affect the oil flavor in the Gardenia fruit oil.
