摘　　要：目的对三亚市某幼儿园一起细菌性食物中毒进行实验室分析,为食物中毒处置提供依据。方法根据GB/T4789《食品微生物学检验》对所采样品进行常见致病菌培养,采取实时荧光PCR方法对检出的金黄色葡萄球菌进行A～E型肠毒素检测。结果从8份留样食品、5份患者肛拭子检出产A型肠毒素的金黄色葡萄球菌,1份患者呕吐物检出产C型和D型肠毒素的金黄色葡萄球菌。结论该起食物中毒事件主要由产A型肠毒素的金黄色葡萄球菌引起。建议加强学校、幼儿园餐饮食品卫生监督和采购环节的管理,提高老师卫生意识,防止食物中毒的发生。Objective To detect the cause of bacterial food poisoning in a kindergarten in Sanya through laboratory analysis,so as to provide basis for the handling of food poisoning events.Methods The samples collected from food poisoning were tested for pathogenic bacteria according to GB/T4789 Food Microbiology Test,and Staphylococcal enterotoxins A to E were detected by the real-time fluorescent PCR.Results Staphylococcus aureus strains were detected from 8 preserved foods and 5 patients'anal swabs,and identified as Staphylococcus aureus producing enterotoxin A. Staphylococcal enterotoxin C and D was found in one patient's vomit.Conclusion The food poisoning incident was mainly caused by Staphylococcus aureus producing enterotoxin A.It is recommended to strengthen the supervision of food hygiene and procurement links in schools and kindergartens,and to improve teachers' awareness of hygiene,so as to prevent food poisoning.
