摘  要:食品酶学是一门综合生物化学、食品工艺学和微生物学等学科的新兴学科,在食品专业本科生的能力培养方面具有重要的作用,如何提高授课效率和学生的综合素质是当前需解决的主要问题。针对目前食品酶学课程存在的问题以及当代大学生的培养计划和要求,该课程在传统教学过程中引入提高实践能力的实验教学环节、双语教学环节、信息化教学环节等,提出了一种有利于学生创新和应用能力培养的混合式教学方法。同时,借助科学合理评价方式,激发学生的学习能动性和积极性。Food enzymology is a new comprehensive subject including biochemistry,food technology and microbiology,which plays an important role in education of undergraduates majoring in food science.How to improve the efficiency of classroom teaching and students’ comprehensive quality is the critical problem at present.Based on the present problems of the course of food enzymology and the training plans and demands for undergraduates,the course introduced the implements of experimental teaching,bilingual teaching,informationizational teaching in the traditional teaching,and a hybrid teaching method was established to improve innovation and application abilities of students.Meanwhile,the learning initiative and enthusiasm of students was stimulated according to a reasonable assessment method.
