摘 要:酿酒葡萄原料的卫生状况受到多种因素的影响,其卫生质量会直接影响葡萄酒的品质。本文主要阐述了葡萄栽培及其采收过程中影响葡萄果实生物安全的主要因素及其防控措施,具体包括:农药的种类、应用范围和控制措施;灌溉用水的安全隐患分析与监控措施;肥料种类、施肥时间及其改善要点;采收过程中的安全隐患和改善措施;运输过程中的安全隐患和消除方法;贮藏期间的安全隐患与管理要点。基于对以上因素和风险的分析,为今后生产更加安全可靠的葡萄原料提供一定的理论依据。Many factors have impact on the safety profile of the wine grape, leading to unexpected effects on the quality of the final product. Some of them during cultivation and harvest and relevant cautions have been discussed in this study, as structured below:(1) different types of pesticides and their applications and control measures;(2) the potential safety hazard of irrigation water and relevant monitoring measures;(3) fertilizer types, fertilization time and essential points for improving fertilization;(4) the potential safety hazard during harvest and ameliorative measures;(5) the potential safety risk during transportation and coping strategies;(6) cautions during storage and main points in the course of management. Based on these analyses, some theoretical foundations could be provided for producing healthier grapes in the future.
