摘 要:为明确初烤烟叶颜色数据与其常规化学成分和感官质量的关系,采集国内各产区初烤把烟,借助色差仪测定烟叶颜色参数,检测相应烟叶样品的常规化学成分,评价其感官质量,并做相关性分析。结果表明:烟叶颜色参数L^*和h^*与总烟碱和总氮含量达到显著负相关,a^*和a^*/b^*与总烟碱和总氮含量达到显著正相关,b^*和C^*与总糖含量达到显著正相关;烟叶颜色参数L与香气量达到显著正相关,a^*与杂气达到显著负相关,a^*/b^*和h^*与香气质达到显著负相关,b^*和C^*与劲头达到显著正相关。烟叶颜色参数与烟叶化学成分及感官质量均有显著相关性,可为烟叶采购、打叶复烤提供指导作用和数据支撑。In order to find out the correlations of flue-cured tobacco color with conventional chemical compositions and sensory quality,we collected cured tobacco leaves in bundles from various areas of China,measured their color parameters by using colorimeter,analyzed their conventional chemical compositions,and evaluated their sensory quality.The results of correlation analysis indicated that:the tobacco color parameters L^* and h^* were significantly negatively correlated with total nicotine and total nitrogen contents;a^* and a^*/b^* were significantly positively correlated with total nicotine and total nitrogen contents;b^* and C^* were significantly positively correlated with total sugar content;there was a significantly positive correlation between L and aroma quantity;there was a significantly negative correlation between a^* and offensive odor;a^*/b^* and h^* exhibited a significantly negative correlation with aroma quality;b^* and C^* showed a significantly positive correlation with smoking strength.The color parameters of tobacco leaves were significantly correlated with their chemical compositions and sensory quality,which could provide guidance and data support for tobacco leaf purchasing,threshing and redrying.
