摘　　要：由于谷物中含有真菌的有毒次生代谢物霉菌毒素,其对动物的健康、生产性能及动物源性食品的质量可能有负面影响,这对动物营养是一个永久性的挑战。因此,本文综述了霉菌毒素在动物营养中存在的问题、对易感动物的影响以及应对谷物感染毒素污染的管理策略。The contamination of cereal grains with toxical secondary metabolites of fungi, namely, mycotoxins, which is a permanent challenge in animal nutrition as health and performance of the animals may be compromised as well as the quality of animal derived food. Therefore the present article reviews the issues of mycotoxins(deoxynivalenol and zearalenone)in animal nutrition, effects on susceptible animals and some management strategies to cope with the contamination of grain.
