摘 要:番茄红素是一种富含在番茄,也存在于多种蔬菜水果中的类胡萝卜素。动物和人体不能合成类胡萝卜素,食物是唯一获取来源。多项研究证明它是类胡萝卜素中最有效的抗氧化物质,在细胞中通过抗氧化损伤起到多种生物学作用。在人体健康应用方面具有广泛研究,同时也有人将其应用到家禽生产中。文章综述番茄红素的结构特性、生物活性和在动物中的应用效果,旨为进一步研究和应用提供参考。Lycopene is a carotenoid naturally present in many vegetables and ripe fruits especially abundant in tomatoes. It has been proved to be most potent antioxidant among various common carotenoids. The molecular structure of lycopene (C40H56 ) characterized by an extensively conjugated polyene chain. Alltransconfiguration exist predominatly in plant whereascis-Lycopene proved to be better absorbed in intestinal. Lecopene has many biological effects via protection cells against oxidative damage. It has been exclusive studied in human health maintainance and also been tested in poultry production. The structure,biological activity and application effect of lycopene in animals are reviewed in this paper. The purpose of this review is to provide references for the further study and application of lycopene.
