摘　　要：大豆胰蛋白酶抑制因子是大豆中一类主要的抗营养因子,其主要危害表现在致使胰腺增生、肿大以及抑制动物生长等方面。近年来,针对大豆胰蛋白酶抑制因子的检测方法已成为研究热点。文章通过对大豆胰蛋白酶抑制因子的危害和现有的检测方法进行综述,旨在为大豆及其制品中胰蛋白酶抑制因子的监控以及建立大豆胰蛋白酶抑制因子快速、高效的检测方法提供参考。Soybean trypsin inhibitor is one of the main anti-nutritional factors in soybean,it can cause hyperplasia and enlargement of the pancreas,and inhibit animal growth.In recent years,the detection method for soybean trypsin inhibitor has become a research hotspot.In this paper,the harm of soybean trypsin inhibitor and the existing detection methods were reviewed,in order to provide reference for the monitoring of soybean trypsin inhibitor and the establishment of rapid and efficient detection methods for soybean trypsin inhibitor.
