摘　　要：地沟油又称馊水油,是指从废弃物或残渣中提炼出的油,包括回锅油等废弃食用油在内。地沟油在中国已经成为一个严重的食品安全问题,暴露了中国食品安全保障体系的缺陷。本文分析了中国地沟油生产和销售的产业链,讨论了中国在监督地沟油使用中所面临的困难和政府应采取的政策。Gutter oil, also known as sour oil, referring to the oil extracted from waste or residue, including the return of cooking oil and other waste cooking oil. Gutter oil has become a serious food safety problem in China, which reflects on the defects of our food safety guarantee system. The industrial chain of gutter oil production and sales in China is analyzed, and the difficulties in supervising the use of gutter oil and policies adopted by the government are discussed.
