内酯类香料的醇解反应及其产物质谱裂解规律探讨

摘　　要：配制常见的内酯类香料的乙醇溶液,采用气相色谱-质谱联用方法(GC-MS)分析得到色谱保留时间用于计算保留指数,得到质谱图用于分析这一类化合物的质谱裂解规律。以上两种数据的结合,可应用于相关香精或产品的成分剖析工作。The ethanol solutions of lactones were prepared and analyzed by gas chromatography-mass spectrometry to obtain the chromatographic retention time for calculating the retention index.The obtained mass spectrums were used to analyze the mass spectrometry cleavage of alcoholysis products of the lactones.It was showed that these two analytical data could be applied to the component analysis for related flavors or products.
