摘 要:近代以来,东北民间食俗中的猪文化在世居民族和外来移民双重影响下发生较大变化。自古以来,东北地区的民众便是以养猪著称,掌握着较为丰富的养猪经验,其近代民间食俗中的猪文化贯穿在日常饮食、饮食礼俗及特色食品等诸方面,并呈现出迥异于其他地区的多样化特征,还对后世民众的饮食生活及行为习惯产生较为深远持久的影响。Since modern times, the pig culture in the folk food custom in modern Northeast China has changed greatly under the influence of both the native people and the immigrants. Since the ancient times, the people in Northeast China have been famous for raising pigs and have had a rich experience in pig raising. The pig culture in modern folk food custom runs through the aspects of daily diet, diet etiquette and characteristic food, presents the diversified characteristics which are very different from other regions, and also has a more far-reaching and lasting impact on the eating life and behavior habits of later generations.
