摘  要:目的为了解辖区熟肉制品微生物污染情况,为相关部门加强监管、预防和控制食源性疾病的发生提供科学依据。方法在第二、三季度,在辖区农贸市场(门面店)、超市随机进行熟肉制品的食品采样送检工作,并对检测结果进行汇总分析。结果总共采样150份熟肉制品,合格26份,合格率为17.33%。其中,大肠菌群合格26份,合格率为17.33%;沙门氏菌合格142份,合格率为94.67%;金黄色葡萄球菌合格148份,合格率为98.67%;单核细胞增生李斯特氏菌合格146份,合格率为97.33%。超市采样62份,农贸市场采样88份,Fisher确切概率法分析发现,超市和农贸市场采集样品中大肠菌群、沙门氏菌和单核细胞增生李斯特氏菌合格率有差异(P<0.05)。结论辖区市售熟肉制品微生物污染状况严重,超市和农贸市场都存在不同程度的微生物污染状况,卫生质量问题突出,提示有发生食源性疾病事件的隐患,应引起政府相关部门高度重视,建议加强监管、控制污染源头。Objective In order to understand the microbial contamination of cooked meat products in Beilun, and provides a scientific basis for relevant departments to strengthen supervision, prevention and control of foodborne diseases.Methods In the second, third quarter, random sampling of food samples for cooked meat products was conducted in the farmers’ markets(facade shops) and supermarkets in the area, and Summarizing and analyzing the results of the Laboratory test. Results A total of 150 cooked meat products were sampled and 26 qualified, the rate of qualification is 17.33 %.The coliform group was 26 qualified, the qualified rate was 17.33 %, the Salmonella was 142, the qualified rate was94.67 %, the Staphylococcus aureus was 148, the qualified rate was 98.67 %, and 146 of the monocytic List S bacteria were qualified, and the qualified rate was 97.33 %. The exact probability analysis of Fisher found that there were differences in the rate of qualification of coliform, Salmonella and monocytic List S bacteria in the samples collected from supermarkets and farmers’ markets(P<0.05). Conclusions There are serious microbial contamination in cooked meat products sold in the municipal area. There are different levels of microbial pollution in supermarkets and farmers’ markets.The problems of health quality are prominent, suggesting the hidden dangers of food borne diseases. The relevant government departments should attach great importance to the supervision and control the source of pollution.
