摘 要:本文采用磷酸缓冲液提取法提取成品猪和乳猪猪肝中的超氧化物歧化酶,用邻苯三酚自氧化法测定酶液的SOD酶活力比较成品猪猪肝与乳猪肝中SOD酶活性,结果表明,在-20℃低温保存猪肝,猪肝中SOD酶活性变化不大,冰冻乳猪肝单位酶活力范围为7.4-23.8U/mL,总酶活力范围为270.10-875.84U;冰冻成品猪猪肝的单位酶活力在29.9-36.5U/mL,总酶活力在953.81-1285.22U,乳猪肝与成品猪猪肝SOD酶活性存在明显差异.In this paper, superoxide dismutase(SOD) in pig and suckling porcine liver was extracted by phosphoric acid buffer solution. The activity of SOD enzyme in the enzyme solution was determined by pyrogallol autoxidation method. The SOD activity in the finished porcine liver and suckling porcine liver was compared. The results showed that the SOD activity in the porcine liver changed a little when the porcine liver was cryopreserved at-20°C. The SOD activity in the porcine liver of frozen suckling pigs ranged from 7.4 U/mL to 23.8 U/mL and the total activity ranged from 270.10 U to 875.84 U. The SOD activity in frozen porcine liver was 29.9-36.5 U/mL, and the total activity was 953.81-1285.22 U. There was a significant difference between the SOD activity in suckling porcine liver and that in finished porcine liver.
