摘  要:对两种测定大曲液化酶活力的方法进行了对比分析。比色法测定大曲液化力和分光光度法测定液化酶活力,方法所依据的原理都是碘遇淀粉后反应产生特殊的颜色变化。但是,比色法检测耗时长,容易出现颜色判断误差,精确度不高。而分光光度法测定液化酶活力,速度快,精确度高。通过本文的对比分析,可以为大曲液化酶活力测定方法的选用提供一定的参考。In this study, two methods for the determination of the liquefying activity of Daqu enzyme were compared. Both colorimetric method and spectrophotometric method are based on the special color reaction between iodine and starch. Colorimetric method is time-consuming, the determination accuracy is not high, and color judgment errors occur easily. However, spectrophotometric method is rapid and has high determination accuracy. Accordingly, spectrophotometric method is a better choice for the determination.
