摘 要:改革开放40多年来,中国居民收入水平不断提高,食物消费不断升级,食物消费结构发生了巨大变化。采用历年《北京市统计年鉴》数据描述性分析了北京市城镇居民食物消费动态变迁特征,运用ELES模型进行居民食物消费趋势分析发现,北京市城镇居民食物消费支出趋向饱和,饮食服务消费比重持续增长,家庭食物消费中植物类消费赶超动物类消费,饮食服务成为北京市城镇居民食物消费的主要增长点。最后,针对北京市城镇居民目前的食物消费特征和趋势提出了相关发展建议。Over the past 40 years of reform and opening up, China's residents' income has been constantly improving, food consumption has upgraded, and food consumption structure has undergone tremendous changes. This paper used the statistical data of Beijing Statistical Yearbook to describe the dynamic changes of food consumption of urban residents in Beijing, and further analyzed the trends with ELES model. The results showed that the food consumption expenditure of urban residents in Beijing tended to be saturated, the proportion of food service consumption continued to grow, the consumption of plant-based in family food exceeded that of animal-based, and food service was the main growth point of food consumption of urban residents in Beijing. Finally, several suggestions was proposed based on the food consumption characteristics and trends.
