摘　　要：建立同时对月饼中的叔丁基对羟基茴香醚(BHA)、2,6-二叔丁基对甲酚(BHT)、叔丁基对苯二酚(TBHQ)、没食子酸丙酯(PG)、2,4,5-三羟基苯丁酮(THBP)、去甲二氢愈创木酸(NDGA)、2,6-二叔丁基-4-羟甲基苯酚(Ionox-100)、没食子酸十二酯(DG)、没食子酸辛酯(OG)9种抗氧化剂进行高效液相色谱(HPLC)测定的研究方法。方法:采用石油醚提取样品中的油脂,乙腈提取目标化合物,用高效液相色谱法测定,以乙腈-1.5%乙酸水为流动相,梯度洗脱,二极管阵列检测器(PAD)定性定量测定月饼中9种抗氧化剂(BHA、BHT、TBHQ、PG、THBP、NDGA、Ionox-100、DG、OG)。结果:在添加浓度1.0~50.0μg/mL范围内,9种抗氧化剂的平均回收率在97.44%~100.01%之间,相对标准偏差(RSD)为0.26%~1.31%。结论:本方法操作简单,可操作性强,有良好的稳定性和重现性,具有广泛推广的意义。Build at the same time of moon cakes of tertiary butyl hydroxy anisole(BHA),2,6-BHT(butylated hydroxytoluene),tertiary butyl hydroquinone(TBHQ),gallic acid,acrylic ester(PG),two three,four,five-butyl ketone(THBP),go armour dihydrogen guaiac wood acid(NDGA),2,6-2 tertiary butyl-4-hydroxymethyl phenol(Ionox-100),gallic acid and twelve ester(DG),gallnut will ester(OG)9 kinds of antioxidants in the high performance liquid chromatography(HPLC)determination of research methods at the same time.Methods:Samples of grease in petroleum ether extract samples,using acetonitrile extraction of target compounds,using high performance liquid chromatography(HPLC)method,with acetonitrile and 1.5%acetic acid water as mobile phase,gradient elution and with diode array detector(PAD)and quantitative determination of 9 kinds of antioxidants in moon cakes(BHA,butylated hydroxytoluene,TBHQ,PG,THBP,NDGA,Ionox-100,DG,OG).Results:The average recovery of 9 antioxidants was 97.44%~100.01%,and the relative standard deviation(RSD)was 0.26%~1.31%.Conclusion:This method is easy to operate and has good stability and reproducibility.
