基于培养应用型人才,探索食品发酵工程的教学改革

摘　　要：结合北部湾大学培养应用型高级人才的办学特色和理念,广西北部湾经济开发区的果蔬优势资源,以及我院食品工程专业的学生生源特点,我们尝试探索食品发酵工程的教学改革,从发酵工程的理论教学(课程内容与理论教学方式)和实验教学(实验教学内容和实验考核方式)两个方面进行调整与改革。经过近三年来的教学改革,发酵工程的教学工作得到不断改进和完善,并取得了较满意的效果,不仅提高了我院发酵工程这门课程的教学质量,还提高了学生的学习兴趣与实践动手操作能力,也获得了北部湾地区食品企业的认可,使我院毕业生的就业率逐年递增。Considering the characteristics and concepts of training applied senior talents in Beibu Gulf University,the superior resources of Beibu Gulf Economic Development Zone in Guangxi province,and the origins of the students enrolling in food engineering specialty in our college,we try to adjust and reform the two aspects of fermentation engineering teaching including the theoretical teaching(curriculum contents and theoretical teaching methods)and the experimental teaching(experimental contents and experimental evaluation methods).After nearly three years of teaching reforms,the teaching of fermentation engineering has been continuously improved and perfected,and has achieved satisfactory results.It has not only improved the teaching level of fermentation engineering in our college,but also raised the interests of the students in learning,improved the students'practical operation ability,and also gained the recognition of food enterprises in Beibu Gulf region,which has enabled the employment rate of the graduates of our college to increase year by year.
