摘　　要：调研某铁路局集团公司旅客列车餐车经营外包业务现状,从管理制度、人员素质、经营等方面阐述存在的主要问题,提出注重列车餐车经营外包公司资质建设、明确食品生产经营责任主体、建立健全食品安全管理制度、加强外包服务人员卫生知识培训、强化旅客列车食品采购配送统一管理、控制食品安全关键环节、实施食品经营全过程监管、建立食品安全联系机制等对策。This paper investigates the current situation of the outsourcing business of the passenger train dining car in a railway administration group company,and expounds the main problems from the aspects of management system,personnel quality and management,etc.,and puts forward some countermeasures such as paying attention to the qualification construction of the outsourcing company of the passenger train dining car,clarifying the main body responsible for food production and management,establishing and perfecting the food safety management system,strengthening the training of the health knowledge of the outsourcing service personnel,strengthening the unified management of the food procurement and distribution of passenger trains,controlling the key links of food safety,implementing the supervision of the whole process of food management,and establishing the food safety connection mechanism,etc.
