摘　　要：速溶茶和茶浓缩汁是目前茶叶深加工领域工业化和商业化程度最高的产品。文章对近20多年来国内外速溶茶和茶浓缩汁产品的种类、生产和应用情况进行了分析和总结,并预测和分析了速溶茶和茶浓缩汁今后的发展前景和趋势。分析表明,中国、印度、斯里兰卡、美国是主要的速溶茶生产国,跨国茶叶公司或食品公司雀巢、联合利华、詹姆斯·芬利、塔塔以及中国的大闽、华城等是主要的速溶茶生产公司。速溶茶产品依采用的茶叶原料种类、加工技术、产品溶解性、颗粒度以及速溶茶应用目的不同,可划分为几十种不同的产品种类。随着消费者对食品和饮料的天然、健康、方便等方面诉求的增长,食品和饮料行业的制造商将更注重创新来满足消费者的需求,预计速溶茶和茶浓缩汁产品在国际市场将具有更大的发展前景。Instant tea and tea concentrates are the most industrialized and commercialized products in the field of tea deep processing.This paper analyzed and summarized the category,the production and application status of instant tea and tea concentrates at home and abroad for more than 20 years,and predicted and analyzed the future development prospect and market trend of instant tea and tea concentrates.The analysis shows that China,India,Sri Lanka and the United States are major production country of instant tea.Multinational tea or food companies,such as Nestle,Unilever,James Finlays,Tata and China's Damin and Huacheng are the main instant tea production company.In accordance with tea raw materials,processing technology,product solubility,granularity and application purpose,instant tea products can be divided into dozens of different product types.As the consumers'demands for natural,healthy and convenient food and drink grow,the manufacturers in the food and beverage industry will focus more on innovation to meet consumer demand.It is expected that instant tea and tea concentrates will have greater development prospects in the international market.
