摘  要:为研究主动自发气调对羊肚菌保鲜效果的影响,试验设置初始比例70%O2+30%CO2、80%O2+20%CO2、90%O2+10%CO2、100%O2及自然空气(CK)5个处理,在(15±0.5)℃下贮藏,每天观察羊肚菌外观变化,并测定其生理生化和品质指标,共观测3 d。结果表明,除CK外其他处理均能延长羊肚菌的保鲜期,主动自发气调处理在保持羊肚菌色度L*值和感官品质,抑制失重率上升,维持可溶性蛋白质、游离氨基酸和总酚含量等方面体现出优势,其中以90%O2+10%CO2处理效果最佳。The objective of this study is to investigate the effect of active modified atmospheres packaging on fresh-keeping of morchella sextelata,and the treatments of initial O2/CO2 proportions including 70%O2+30%(15±0.5)℃,the appearance properties and the physio-chemical indices of Morchella sextelata were determined every day and performed for 3 days.The results showed that treatments except CK,extend the shelf life of Morchella sextelata,maintained the color L*and sensory score,inhibited the weight loss rate increase,maintaining the soluble protein,free amino acid and total phenol content of Morchella sextelata,especially treatment of 90%O2+10%CO2 had the best preservation effect on Morchella sextelata.
