摘 要:我国是果蔬生产与消费大国,但现有的果蔬采后保鲜措施仍存在一定问题,从而引发了诸如果蔬腐烂、资源浪费严重等问题。果蔬气调贮藏库是在普通冷库基础上,通过调节环境气体成分以延长果蔬贮藏期的一种冷库。本文介绍了果蔬气调贮藏库的技术原理及设备组成,并结合国内外气调贮藏库的发展现状,对我国气调库的应用与推广进行了讨论与展望。China is a major country in the production and consumption of fruits and vegetables.However,there are some problems of present post-harvest treatment technology of fruits and vegetables,such as vegetable decaying and resources wasting.Based on the common refrigerator,the controlled atmosphere storage is a new type of cold storage that extends the storage period of products by adjustment of gas composition.This paper introduced the technical principle and equipment composition of the controlled atmosphere storage of fruits and vegetables,and discussed its application and promotion in China,based on the application status of the controlled atmosphere storage at home and abroad.
