摘  要:枣原产于我国,枣果营养丰富,不仅含有糖、有机酸、蛋白质、矿物质等一般营养成分,还含有多种生物活性物质,是传统的药食同源食品,具有多方面的医疗保健功能。综述了枣种质资源果实多糖、氨基酸、类黄酮、环核苷酸、皂苷、生物碱、膳食纤维等生物活性物质的鉴定评价研究进展,并对枣生物活性物质未来研究方向进行了展望,可为提高枣种质资源的利用率、创制生物活性物质含量高的枣种质及枣功能性产品的研发提供科学依据。Chinese jujube originated in China,jujube fruit was rich in nutrition,containing general nutrients such as sugars,organic acids,protein,minerals,and bioactive substances.Chinese jujube was regarded as one of the homology of medicine and food and had many medical and health care functions.In this paper,the research progress on identification and evaluation of bioactive substances such as polysaccharides,amino acids,flavonoids,cyclonucleotides,saponins,alkaloids and dietary fiber of Chinese jujube germplasm resources were reviewed,and the future research direction of bioactive substances of Chinese jujube was forecasted,which can improve the utilization of Chinese jujube germplasm,and create high bioactive substances content of Chinese jujube germplasm resources,and provide scientific basis for the development of functional products of Chinese jujube.
