摘  要:以养心草为研究对象,利用其富含钙的营养特性,采用过量有机酸对钙的结合与稳定作用,以及添加低聚半乳糖作为营养强化剂,研制开发了一款易被人体吸收的植物源钙饮料。经优化得到最佳工艺条件为:将干制养心草与水以料液比1∶40(g∶mL)的比例混合,在90℃条件下浸提45 min后,添加4.60 mg/mL过量乳酸、6.45 mg/mL低聚半乳糖以及150 mg/mL蔗糖。所得优化产品中的乳酸钙结合率达92%,钙的质量浓度高达701.48 mg/L,显著高于复原乳中钙含量。该研究结果表明养心草是优良的植物钙来源,可用于功能食品开发。In order to explore the edible development of plant-derived calcium,the Sedum aizoon L.with its calcium-rich nutritional characteristics was used as the research object.Through excessive usage of organic acid for calcium binding and stabilization and the addition of galacto-oligosaccharide(GOS)as the nutritional supplement,the plant-derived calcium beverage which could be easily absorbed by the human body has been developed.The optimum technological conditions were as follows:the ratio of dry cultivar to water was 1∶40(g∶mL),and after leaching at 90℃ for 45 min,4.60 mg/mL excess lactic acid was added.Then,6.45 mg/mL GOS and 150 mg/mL sucrose were added at last.The calcium lactate binding rate of the optimized product reached 92%,and the calcium concentration reached 701.48 mg/L,which was significantly higher than the calcium content in the reconstituted milk.The results indicate that Sedum aizoon L.is an excellent source of calcium,and could be used for functional food development.
