摘 要:通过问卷调查与半结构访谈,获取安庆市常住居民对城市美食旅游效用价值、美感价值和服务价值的重要程度与满意度的判定与评价,结合IPA分析法,探究人们对城市美食旅游的期望与感知价值的差异。结果表明:滋补养颜、绿色养生、营养搭配等食补疗养功能最为安庆市市民所关注,其次是餐饮卫生、噪音干扰、拥挤程度等用餐环境的营建;人们消费偏重强调食物自身品质,对装饰摆盘、盛载器皿、菜品名称等美感附加值关注相对较弱;文化性展现在安庆市美食旅游调查中得到了一致认可。基于分析结果,针对性地提出安庆市美食旅游市场拓展建议。Through questionnaires and semi-structured interviews,this paper obtained the judgment and evaluation of the value system of urban food tourism by residents of Anqing.Combined with IPA analysis,this paper explored the differences between residents’ expectation and perceived value of urban food tourism.The results showed that the dietary tonic functions such as nourishing skin,green health and nutrition were the most concerned by the residents of Anqing City,followed by the construction of dining environment such as catering hygiene,noise interference and congestion.They attached great importance to the quality of the food itself,and the attention to the additional aesthetic value such as decorative trays,containers and dishes was relatively weak.Cultural display was unanimously recognized in the survey of food tourism in Anqing City.Finally,some suggestions for the development of food tourism market in Anqing City were put forward.
