食品中金属元素形态分析技术及应用研究

摘　　要：金属元素虽然含量小,但是对人体生长发育具有很重要的作用,所以对食品中的金属元素研究受到越来越多人的关注。由于金属元素的形态会影响人体对金属元素的吸收,所以研究食品中金属元素的形态也是当前重要课题之一。笔者根据资料查阅及工作经验,从物理检测、化学检测和生物检测三个方面介绍食品中金属元素形态分析技术。Although the content of metal elements is small,it plays an important role in the growth and development of human body,so the research on metal elements in food has attracted more and more attention.As the form of metal elements will affect the absorption of metal elements by human body,studying the form of metal elements in food is also one of the current important topics.According to the data and working experience,the author introduces the speciation analysis technology of metal elements in food from three aspects of physical detection,chemical detection and biological detection.
