水解剂对水貂皮氨基酸组分的影响

摘  要:以水貂皮削勾皮片为原料,分别用硫酸和盐酸2种不同水解剂进行处理,通过对水解物的氨基酸组分的分析,探讨水解剂及其处理条件对水解产物的影响。结果表明:用硫酸处理水貂皮皮片可将氨基酸氧化,时间越长,氧化越彻底;盐酸水解可得到16种氨基酸,甘氨酸和谷氨酸含量(质量分数)分别为24.36%和11.47%,羟脯氨酸含量为10.29%,酸性氨基酸和碱性氨基酸含量分别为18.07%和13.23%,中性氨基酸含量为68.70%;盐酸水解液静置9d后,苏氨酸和酪氨酸含量增加,其余氨基酸含量均降低,其中,酸性氨基酸下降率大于中性和碱性氨基酸。Sulphuric acid and hydrochloric acid as the hydrolytic reagent,the effect of hydrolytic reagent and Ireatment conditions on the hydrolysis products were studied by analysis on the amino acid composition.It is found that when sulphuric acid as the hydrolytic reagent,amino acids can be oxidized,the longer the time,the more complete of the oxidation.When hydrochloric acid as the hydrolytic reagent,16 kinds of amino acids can be obtained,among them the content(mass fraction)of glycine and glutamic acid are 24.36% and 11.47% respectively,hydroxyproline is 10.29%,acidic amino acid is 18.07%,basic amino acid is 13.23% and neutral amino acid is 68.70%.After 9 days being placed,hydrolysates treated with hydrochloric acid,the contents of threonine and tyrosine are increased,other amino acids are decreased,among them the decline rate of acidic amino acids is higher than that of neutral amino acids and alkaline amino acids.
