摘 要:本文以食品包装用纸为基质,利用整体法评定酵母菌总数检测的测量不确定度,以探讨一种新的评定微生物测量不确定度方法。依据食品安全国家标准GB 4789.15-2016《食品微生物学检验霉菌和酵母菌总数测定》和RB/T 151-2016《食品微生物定量检测的测量不确定度评估指南》对酵母菌总数进行测量不确定度评定。结果显示,在置信水平95%时,本实验食品包装用纸中酵母菌总数检测结果的扩展不确定度U为0.24 log10。实验结果报告为1.4×10^6~4.4×10^6 CFU/g。由此得出,本文对测量不确定度作出评估的整体法简单快捷,适用于食品包装用纸关于酵母菌的日常质量控制与监测。In this paper,food packaging paper is used as the matrix to evaluate the measurement uncertainty of the total number of yeast by using the whole method,so as to achieve the purpose of exploring a new method of evaluation of the measurement uncertainty of microbial detection.According to National Food Safety Standard GB 4789.15-2016 Microbiological Examination of Food Determination of the Total Number of Molds and Yeasts and RB/T 151-2016 Evaluation Guide for Measurement Uncertainty of Quantitative Detection of Food Microorganisms,the measurement uncertainty of the total number of yeasts was evaluated.The results show that at 95% confidence level,the expanded uncertainty U of the total number of yeast in food packaging paper was 0.24 log10.The experimental results are reported as 1.4×10^6-4.4×10^6 CFU/g.It is concluded that in this paper,the uncertainty of measurement is evaluated by the whole method.The results are simple and fast.It is suitable for the quality control and monitoring of yeast in food packaging paper.
