摘　　要：相变蓄冷技术在食品的冷藏保鲜运输有着广泛的应用,对食品的新鲜度保持有着重要作用,但仍需积极待探索与推广其在食品冷藏保鲜运输中的应用。首先对相变蓄冷材料进行了分析研究,然后对蓄冷板冷藏车和蓄冷运输箱等采用相变蓄冷技术的食品冷藏保鲜运输设备进行了论述,最后对基于相变蓄冷技术的食品冷藏保鲜运输服务的发展趋势进行了分析。随着相变蓄冷技术和冷藏保鲜运输设备的深入发展必将推进中国食品冷藏保鲜运输的快速发展。Phase change cool storage technology has widely application prospect in food cold storage transport,which has important significance in maintaining the freshness of food,and its application in food cold storage transport still needs to be explored and popularized.The phase change cool storage material was introduced firstly,and then the application of phase change cool storage technology in the cold-plate refrigerated car and cold storage transport box,etc.were discussed.At last,the development trend of the food cold storage transport based on phase change cool storage technology in the future was analyzed.In summary,with the development of phase change cool storage technology and refrigerated storage transportation equipment,the food cold storage transport will be greatly flourished in China.
