摘 要:本文测定8株香菇菌株的二氧化硫含量和多糖含量。结果表明,不同菌株的二氧化硫和多糖含量不同,二氧化硫以浦香08含量最高,为66.23 mg·kg^-1,申香和林香菌株的子实体二氧化硫含量符合国家食品安全限定标准;子实体多糖含量以林香19和林香18最高,分别为16.8 g·kg^-1和16.6 g·kg^-1,明显高于其它菌株,而香菇发酵液中多糖含量差异不大。综合考虑,林香菌株可为高产多糖菌种的选育提供较好的依据。The content of sulfur dioxide and polysaccharide in 8 strains of Lentinus edodes were determined.The results showed that the content of sulfur dioxide and polysaccharide of different strains was different.The highest content of sulfur dioxide was Puxiang 08,which was 66.23 mg·kg^-1.The content of sulfur dioxide in the fruiting bodies of Shenxiang and Linxiang strains met the national food safety limit standard.The highest content of polysaccharide in the fruiting bodies was Linxiang 19 and Linxiang 18,which were 16.8 g·kg^-1 and 16.6 g·kg^-1,respectively,which was significantly higher than other strains,but the content of polysaccharide in Lentinus edodes fermentation broth had little difference.The results showed that Linxiang strain could provide a good basis for the selection of high polysaccharide producing strain.
