摘  要:基于三维网状微孔结构的泡沫镍微纳敏感材料,探索了一种可用于蜂蜜种类区分的电化学感知系统。以泡沫镍材料作为工作电极,Pt电极作为对电极,Ag/AgCl(饱和KCl溶液)电极作为参比电极,实验对比了多种电极对蜂蜜的检测效果,从而确定泡沫镍更适合蜂蜜类型区分。实验检测蜂王浆、菊花蜂蜜、枇杷蜂蜜三种蜂蜜的循环伏安法(CV)和电流-时间曲线法(i-t)检测数据,CV扫描结果表明了各类蜂蜜中的糖分在泡沫镍材料上发生了明显的氧化-还原反应,i-t实验结果表明三种不同蜂蜜在不同的工作电极下体现出多种特征,泡沫镍的特征最为显著,并依据该特征实现蜂蜜种类的区分。对比实验结果表明泡沫镍电极对不同类型蜂蜜具有良好的灵敏性,干扰实验结果表明该微纳电极具有较好的抗干扰能力。本文所探索的方法具有灵敏度高、操作简便、耗时短、成本低等优势,为蜂蜜的种类区分和真伪鉴别提供了一种新的思路。An electrochemical sensing system for honey species discrimination was explored by using micro/nano nickel foam sensitive material with three-dimensional mesh microporous structure.Foam nickel material,Pt electrode,and Ag/AgCl(saturated KCl)were used as working electrode,counter electrode,and reference electrode,respectively.The effects of different electrodes on honey detection were compared,which determined that nickel foam was more suitable for honey classification.Cyclic voltammetry(CV)and current-time(i-t)scanning were utilized for the discrimination of royal jelly,chrysanthemum honey,and loquat honey.CV scanning results showed that the sugars in various kinds of honey had significant oxidation-reduction reactions on nickel foam.I-t results demonstrated that the three kinds of honey exhibited various characteristics under different working electrodes.The characteristic of nickel foam was the most significant,and the honey was discriminated by i-t characteristic.Control experiment results indicated that the nickel foam electrode was sensitive towards different types of honey.Interference experiment results showed that nickel foam electrode presented good anti-interference ability.The proposed method presented some advantages including high sensitivity,easy operation,short time,and low cost.This method provides a new way for honey species discrimination and authenticity identification.
