摘  要:再生丝素蛋白具有良好的自组装成膜性、透气性和防腐抗菌能力。以薄果皮的草莓、杨梅、黑番茄为试验材料,研究不同浓度(质量分数0.5%、1.0%、1.5%)自组装再生丝素蛋白膜对3种薄皮水果低温贮藏后品质的影响。结果表明,在相同贮藏期内,与对照组(未处理)相比,经再生丝素蛋白膜处理的样品均能有效维持良好品质,水果的失重率较低,感官评价得分以及维生素C、总糖和总酸含量均维持较高水平,其中以1.0%再生丝素蛋白膜处理效果最佳,更能有效地保持鲜切水果在贮藏期间的品质,具有较好的市场应用前景。Regenerated silk fibroin is capable of self-assembly into membrane,and excellent at permeability,antisepsis and antibiosis.Taking 3 kinds of thin-skin fruits including strawberry,waxberry and black tomato as experimental materials,the effect of regenerated silk fibroin membrane at different concentrations(mass fraction 0.5%,1.0%,1.5%)on the storage quality of these fruits under low temperature was studied in this paper.Results showed that during the same storage period,compared with the control group(untreated),the fruits treated with regenerated silk fibroin membrane could maintain good quality.Rate of weight loss was low,while sensory evaluation,content of vitamin C,total carbohydrate and total acid were at high level.Among them,the fruits treated with 1.0%regenerated silk fibroin membrane had the best quality.In conclusion,regenerated silk fibroin membrane can maintain the freshness of fruit during storage,which assures a prospect application in market.
