摘  要:为探索海南茄衣品种烟叶适宜于工业生产的堆积发酵时间,从海南五指山市雪茄研究基地H-382品种中挑选晾制好的茄衣烟叶作为供试材料,研究堆积发酵过程中茄衣烟叶外观质量、常规化学成分、中性致香物质的变化。结果表明,堆积发酵18 d时,类胡萝卜素类降解产物和新植二烯含量最高;堆积发酵24 d时,氮碱比值最接近1,苯丙氨酸类致香物质、类西柏烷类降解产物及茄衣中性致香物质(新植二烯除外)含量最高;堆积发酵30 d时,茄衣外观质量评价得分最高,棕色化反应产物含量最高,钾氯比值最高。综合来看,堆积发酵30 d左右较为合适,能够使海南茄衣烟叶更有利于工业运用。In order to explore the suitable stacking fermentation time for industrial production of Hainan cigar wrapper varieties,the air-dried cigar wrapper leaves of H-382 variety were selected from the Wuzhishan Cigar Research Base of Hainan as test materials. The changes of appearance quality,conventional chemical components and neutral aroma-producing substances of cigar leaves during stacking fermentation were studied. The results showed that the contents of carotenoid degradation products and neophytadiene were the highest after 18 days of stacking fermentation. The ratio of nitrogen to alkali was the closest to 1 after 24 days of stacking fermentation,and the contents of phenylalanine aromatic substances,cephalane-like degradation products and neutral aromatic substances( except neophytadiene) of cigar wrapper were the highest. After 30 days of stacking fermentation,the evaluation score of cigar wrapper appearance quality,the content of browning reaction products and the ratio of potassium to chlorine were the highest. In conclusion,30 days of stacking fermentation was more suitable,which could make Hainan cigar wrapper tobacco more conducive to industrial application.
