摘  要:为研究不同添加剂对紫花苜蓿营养品质与发酵品质的影响,选择比较常用的三个添加剂:纤维素酶(发酵促进剂)、蔗糖(发酵促进剂)、乙酸(发酵抑制剂)添加到紫花苜蓿中,制作袋装青贮饲料,贮藏30 d后测定其发酵品质和营养成分。与对照组相比,添加蔗糖可显著提高苜蓿青贮料中的粗蛋白含量(P<0.05),显著降低中性洗涤纤维、酸性洗涤纤维的含量(P<0.05),添加乙酸或纤维素酶可显著提高苜蓿青贮料中粗脂肪和干物质的含量(P<0.05);添加乙酸、纤维素酶或蔗糖都可显著降低苜蓿青贮料中的p H值和乙酸含量(P<0.05),显著提高苜蓿青贮饲料乳酸含量(P<0.05),添加蔗糖显著降低苜蓿青贮料中丁酸的含量(P<0.05)。因此,添加蔗糖有利于苜蓿青贮饲料营养物质的保存,添加乙酸改变了苜蓿青贮饲料的发酵品质。In order to study the effect of different additives on the nutritional quality and fermentation quality of alfalfa,three kinds of additives were selected,cellulase(fermentation promoter),sucrose(fermentation promoter)and acetic acid(fermentation inhibitor)were added to alfalfa to make bag silage feed.After 30 days storage,the fermentation quality and nutritional components were determined.Compared with the control group,adding sucrose could significantly increase the crude protein content of alfalfa silage(P<0.05),significantly reduce the content of neutral detergent fiber and acid detergent fiber(P<0.05),adding acetic acid or cellulase could significantly increase the content of ether extract and dry matter in alfalfa silage(P<0.05);adding acetic acid,cellulase or sucrose could significantly reduce the content of Alfalfa Silage p H value and acetic acid content in alfalfa silage(P<0.05),significantly increased lactic acid content in alfalfa silage(P<0.05),and sucrose significantly reduced butyric acid content in alfalfa silage(P<0.05).Therefore,the addition of sucrose is beneficial to the preservation of nutritional quality of alfalfa silage,and the addition of acetic acid changes the fermentation quality of alfalfa silage.
