摘 要:姜黄素具有抗菌、抗炎、抗氧化和抗肿瘤等多种生物活性,但其不溶于水的性质大大限制了其临床应用。采用H2O2氧化法制备氧化直链淀粉,系统研究氧化直链淀粉对姜黄素在水中的增溶作用、氧化直链淀粉姜黄素包合物水溶液的稳定性和抗氧化活性。结果表明,直链淀粉被氧化后由于羧基和醛基的引入,在水中的溶解度得到了大幅度的提升。氧化直链淀粉通过与姜黄素形成包合物而大大提高其水溶性,其增溶倍数最高可达3720倍,增溶作用非常显著。而且,氧化直链淀粉姜黄素包合物水溶液的老化现象减缓,水溶液的稳定性得到了改善。由于具有更高的姜黄素含量和稳定性,氧化直链淀粉姜黄素包合物的水溶液呈现出更好的抗氧化活性。本研究表明氧化直链淀粉是姜黄素的有效增溶载体,具有应用前景。Curcumin has many biological activities,such as antibacterial activity,anti-inflammatory,anti-oxidation and anti-tumor.However,its clinical application is limited by the water-insoluble nature.We prepared oxidized amylose by hydrogen peroxide oxidation.The solubilization of curcumin by oxidized amylose,the stability and antioxidant activity of the aqueous solution of oxidized amylose-curcumin inclusion complex were studied.The solubility of amylose in water was greatly improved after oxidation due to the introduction of carboxyl and aldehyde groups.Oxidized amylose improved the water solubility of curcumin by forming inclusion complex,and the solubilization ratio increased up to 3720 times.Moreover,the aging phenomenon of the aqueous solution of oxidized amylose-curcumin inclusion complex was reduced,and the stability of the aqueous solution was improved.The aqueous solution of oxidized amylose-curcumin inclusion complex showed better antioxidant activity due to the higher content of curcumin.Overall,the oxidized amylose is an effective solubilizing carrier of curcumin and has a promising application prospect.
