摘 要:项目通过对八眉猪原种、二元长八、三元约长八以及杜长大等猪的肉食用品质检测分析,结果表明,八眉猪的肉色鲜红,肉质细嫩,纤维致密,大理石纹分布均匀,肌内脂肪含量适中,多汁和保水性好,失水率和滴水损失少,特别是“肉品脂肪坚实,咀嚼有嚼劲”等特性,具有良好的加工性能,客观揭示了八眉猪保持了地方猪种及高原特色肉品品质,肉品质量优良,在优质猪肉生产加工等方面独特的资源优势。Based on the analytical investigation of meat eating quality for pedigreed Qinghai Bamei,binary hybrid(Landrace×Bamei),ternary hybrid(Yorkshire×Landrace×Bamei)and matched group(Duroc×Landrace×Yorkshire)pork,the results showed that Qinghai Bamei pig was bright red in meat color,tender,fiber compact,uniform marbling,moderate in intramuscular fat,higher in water binding capacity and water retention,lower water loss rate and drip loss compared with matched group.In particular,there is a peculiarity that"the quality of the meat is solid fat and chewy"and favourableprocessing performance.It was a objectively revealed that the Qinghai Bamei pig maintain the local pig breeds and plateau characteristics of meat quality,excellent meat quality,unique pork resources in terms of high-quality pork production and processing.
