摘  要:中国白酒是天然生态,通过微生物发酵过程产生的,不同地区由于地理环境和酿造工艺的差异产生了适合当地饮食习惯的香型白酒。影响白酒质量最主要的因素之一就是大曲,大曲的水分测定是酿酒企业检测酿酒质量以及监督酿酒工作的一项重要指标。随着分析技术的进步,大曲分析技术也与时俱进,现已集传统分析方法和近红外光谱分析技术于一身,所测得数据为从事生产和研究的酿酒技术人员提供了重要的数据来源和参考价值。国内一些著名的大型酒企率先将近红外光谱分析技术应用于日常的研究及生产实践中。通过对安徽古井贡酒股份有限公司入房曲水分数据分析,对两种方法得出的数据进行比较,以期说明两种方法相互补充,能够更好地提高工作效率,使大曲分析技术更加完善。Chinese liquor is a natural ecological,produced by the microbial fermentation process,different regions due to the geographical environment and brewing process differences arising from the local eating habits of flavor liquor.Is one of the main factors that influence liquor quality daqu,The measurement of moisture in Daqu is an important indicator of the quality of wine brewing and the supervision of wine making.With the development of analytical technique,the technique of daqu analysis has also been updated,and the traditional analysis method and the near-infrared spectroscopy technique have been combined.The measured data provide important data sources and reference values for brewing technicians engaged in production and research.Some of the country's famous large wine companies have pioneered the use of infrared spectroscopy(ir)for daily research and production practice.This article through to Anhui Gujing Distillery Company Limited into the room moisture data analysis,comparing the data,the two methods in order to illustrate the two methods complement each other,better able to improve the work efficiency,so as to further perfect daqu analysis technology.
