摘  要:为全面掌握陇南野生五叶草莓营养品质及抗氧化能力,指导地方特色水果加工业发展,以陇南野生五叶草莓为试验材料,采用国家标准方法对其营养品质指标及抗氧化能力进行了测定.结果表明,白、红五叶草莓果实品质指标差异不显著,单果质量、果实横径、果实纵径和果实指数分别为0.48 g^0.49 g、8.91 mm^9.17 mm、11.07 mm^11.39 mm和1.24~1.25.白、红五叶草莓果实营养成分丰富,水分、粗脂肪、粗蛋白、维生素C、可滴定酸、总糖、可溶性固形物及黄酮含量分别为80.90 g/100g^87.40 g/100g、7.80 g/100g^9.64 g/100g、3.75 g/100g^5.14 g/100g、45.28 g/100g^48.16 mg/100g、1.02 g/100g^1.23 g/100g、5.42 g/100g^5.71 g/100g、9.67%~11.00%、9.88 g/100g^10.48 mg/g,矿物质元素十分丰富,其中钾、钙、镁含量最高,分别为1.03×10^4 mg/kg^4.02×10^4 mg/kg、2.09×10^3 mg/kg^4.87×10^3 mg/kg、4.27×10^2 mg/kg^1.14×10^3 mg/kg.五叶草莓黄酮提取物对DPPH自由基、羟基自由基均有较强清除能力,具有良好的抗氧化能力,开发利用前景十分广阔.In order to fully grasp the nutritional quality and antioxidant capacity of longnan wild five -leaf strawberry and guide the development of local characteristic fruit processing industry,the wild five -leaf strawberry in Longnan was used as the test material,and its nutritional quality indicators and antioxidant capacity were determined by using the national standard method.The results showed that there was no significant difference in fruit quality between white and red five leaf strawberry.The fruit quality,transverse diameter,longitudinal diameter and fruit index were 0.48~0.49 g,8.91~9.17 mm,11.07~11.39 mm and 1.24~1.25 respectively.Red and white five -leaf strawberry contain rich nutrients,including water,crude fat,crude protein,vitamin C,titratable acid,total sugar content,soluble solids and flavonoids content were 80.90~87.40 g/100g,7.80~9.64 g/100g,3.75~5.14 g/100g,45.28~48.16 mg/100g,1.02~1.23 g/100g,5.42~5.71 g/100g,9.67~11.00%,9.88~10.48 mg/g,respectively.Mineral elements are comprehensive,and the contents of potassium,calcium and magnesium are the highest,which are 1.03×10^4~4.02×10^4 mg/kg,2.09×10^3~4.87×10^3 mg/kg,4.27×10^2~1.14×10^3 mg/kg,respectively.Flavone extract of five -leaf strawberry has a strong scavenging capacity for DPPH free radical and hydroxyl free radical.
