摘  要:本研究选用复合软包装袋包装的全营养配方粉中试样品进行影响因素试验,判断置于原包装袋和平皿中样品在高温(60℃)、强光照(4500±500 Lx)及高湿度(RH 90%)环境储藏14天时,样品固有的理化稳定性及包装袋对样品的保护作用。结果表明,平皿中样品在高湿度环境储藏8天后重量显著增加且发生霉变,样品颜色在3种储藏环境下均显著改变,热敏性及光敏性维生素在相应储藏环境下显著衰减。原包装袋内样品在强光照及高湿度环境下均具有较高的理化稳定性,但于高温环境储藏时发生维生素降解。由此说明,配方粉对高湿度和强光照环境敏感,包装袋能有效保护其储藏过程中不受类似恶劣环境影响,但包装袋对高温阻隔性能相对较差。The trial sample of a complete nutrition powdered formula with pouch packaging was selected to study the protective function of packaging on the physicochemical stability of powdered nutrition formula under challenging storage conditions for 14 days.Nutrition formula powder was stored in original pouch packaging or petri dish(powder was exposed directly to challenging conditions)under the challenging storage conditions include high temperature(60℃),strong light(4500±500 Lx),and high humidity(RH 90%).The changes in physicochemical properties of samples were determined to evaluate the storage stability of the complete nutrition formula with and without packaging protection,and the effectiveness of packaging to protect nutrition formula against challenging storage conditions.Results showed that the weight of sample in petri dish significantly increased after storage 8 days under high humidity storage conditions,and mildew even occurred.Significant change occurred on the color of samples in petri dish,in which heat sensitive vitamins and photosensitive vitamins also showed significant degradation.The samples stored in the original pouch packaging showed excellent physicochemical stability under strong light and high humidity storage conditions,but vitamins loss was observed in samples stored in pouch under the high temperature storage.The results indicated that nutrition formula itself is very sensitive to high humidity and strong light conditions,and packaging having similar or stronger moisture and light prevention property like pouch selected in this research could effectively protect powdered nutrition formulas against these challenging conditions during storage.Whereas,the original packaging has relatively poor barrier performance against high temperature.
