摘　　要：目的了解济南市售梭子蟹不同部位铅、镉含量,并对其污染状况进行评价。方法采集市售样品30份,用电感耦合等离子体质谱仪测定铅、镉含量,根据《食品安全国家标准食品中污染物限量标准》对其含量进行分析评价,用单因子污染指数(Pi)和重金属污染指数(MPI)评价其污染程度。结果蟹体的腿肌、胸肌及黄/膏铅、镉的检出率均为100.00%,铅超标率均为0.00%。腿肌、胸肌及黄/膏镉检测均值分别为(0.040±0.117) mg/kg、(0.214±0.287) mg/kg和(1.440±1.240)mg/kg,镉超标率为腿肌(3.45%)<胸肌(6.90%)<黄/膏(80.00%)。铅的单因子污染指数均低于一级污染(PPb<0.6)水平,镉的单因子污染指数为腿肌(0.08)<胸肌(0.43)<黄/膏(2.88),重金属污染指数(MPI)为腿肌(0.03)<胸肌(0.07)<黄/膏(0.33)。结论济南市售梭子蟹腿肌、胸肌中铅、镉在安全范围内。Objective To understand the content of cadmium(Cd)and lead(Pb)in different parts of commercial portunus trituberculatus in Jinan city,and assess condition and degree of its contamination.Methods A total of 30 commercial portunus trituberculatus samples were collected to measure Cd and Pb content by inductively coupled plasma mass spectrometer.According to Limit of Contaminants in National Food Safety Standards,the content of pollutants was analyzed and evaluated,and the pollution level was evaluated by single factor pollution index method(Pi)and heavy metal pollution index method(MPI).Results The detection rate of Cd in the leg muscle,chest muscle and crab ovary/crab cream was 100.00%,and its exceeding standard rate of Pb was 0.00%.The average content of Cd in led muscle,chest muscle and crab ovary/crab cream were 0.040±0.117 mg/kg,0.214±0.287 mg/kg and 1.440±1.240 mg/kg respectively.The exceeding standard rate of Cd was leg muscle 3.45%<chest muscle 6.90%<crab ovary/crab cream 80.00%.The Pi of Pb was lower than the degree of primary pollution(PPb<0.6),and the Pi of Cd was led muscle(0.08)<chest muscle(0.43)<crab ovary/crab cream(2.88),and the MPI was led muscle(0.03)<chest muscle(0.07)<crab ovary/crab cream(0.33).Conclusion The content of Cd and Pb in the leg muscles and chest muscles of commercial portunus trituberculatus in Jinan city is within safe limits.
