摘  要:为研究中草药添加剂对肉羊体重、激素水平和羊肉理化性状的影响,试验将36只3月龄左右萨福克与小尾寒羊杂交一代公羔,随机均分为2个处理,每个处理3个重复,每个重复6只羊,试验组在精料中添加1.5%中草药添加剂,对照组不添加中草药,试验期3个月。分别在试验前后不同阶段测定肉羊体重和血清中激素水平,试验结束后屠宰测定羊肉理化性状。试验结果表明:试验组不同阶段肉羊体重和血清中三碘甲腺原氨酸(T3)、甲状腺素(T4)、生长激素(GH)和类胰岛素样生长因子-1(IGF-1)水平均不同程度高于对照组,其中IGF-1含量试验后2月和3月组间差异显著(P<0.05),其余组间差异不显著(P>0.05);试验组羊肉pH、系水力和熟肉率高于对照组,差异不显著(P>0.05);试验组羊肉剪切力比对照组降低11.27%,差异显著(P<0.05)。综上所述,中草药添加剂能够增加肉羊体重,促进肉羊激素合成与分泌,改善羊肉品质。The purpose of the test was to study the effects of Chinese herbal medicine additives on body weight,hormone levels,and physicochemical properties of mutton.Thirty-six 3-month-old male lambs of the first Suffolk-Small tail Han sheep-hybrid generation were randomly divided into two treatments with three replicates of each treatment,six sheep for each repetitions.The experimental group added 1.5%Chinese herbal medicine additive to the concentrate,the control group did not add Chinese herbal medicine,the test period was 3 months.The body weight and serum hormone levels of the lamb were measured at different stages before and after the test,and the physicochemical characteristics of the lamb were determined after slaughter at the end of the test.The results showed that the body weight and serum triiodothyronine(T3),thyroxine(T4),growth hormone(GH)and insulin-like growth factor-1(IGF-1)levels of the sheep were higher than those in the control group at different stages.The IGF-1 content was significantly different between the two groups after 2 months and 3 months(P<0.05),and the other groups were not significantly different(P>0.05).The pH,hydration and cooked meat rate of lamb in the test group was higher than the control group,the difference was not significant(P>0.05);the shear stress of test group was 11.27%lower than the control group,the difference was significant(P<0.05).It indicated that Chinese herbal medicine additives could increase the weight of lamb,promote the synthesis and secretion of lamb hormone,and improve the quality of lamb.
