摘  要:为研究舍饲育肥对阿什旦牦牛胴体性状和肉品质的影响,选择24头4周岁的阿什旦牦牛,分为舍饲育肥组和放牧组,每组12头(公母各半),饲养170 d后测定胴体性状和肉品质。结果表明:①育肥组公牛和母牛的宰前活重、日增重、胴体重、屠宰率、净肉重、肉骨比和眼肌面积均极显著高于放牧组(P<0.01);②与放牧组相比,舍饲育肥组公牛和母牛背最长肌的p H45 min值、亮度L*24 h、黄度b*24 h、熟肉率和剪切力均显著降低(P<0.05)。综上所述,通过舍饲育肥可提高阿什旦牦牛的胴体性状,并改善牦牛肉的品质。The purpose of this paper was to study the effect of house fattening on carcass traits and meat quality of Ashidan yak.In the experiment,24 Ashidan yaks were divided into two groups.Each group had six male yaks and six female yaks.The carcass trait and the meat quality related indicators were measured after 170 days house fattening. The results showed as follows: ①the live body weight,daily gain,carcass weight,dressing percentage,net meat weight,meat-bone ratio and eye muscle area of the male and female yaks with house feeding were significantly higher than those of the grazing yak(P<0.01).②Compared with the grazing yaks,the p H45 min,L*24 h,b*24 h,cooking percentage and shear force value of the male and female yaks with house feeding were significantly decreased(P<0.05).In conclusion,house fattening can enhance carcass traits and improve meat quality of Ashidan yak.
