摘 要:以高大鹿药为原料,采用超声波辅助法提取高大鹿药中可溶性物质,研究喷雾干燥过程中助干剂的添加量、浓缩液浓度、进料速度和进风温度等对出粉率的影响,并通过正交试验对最佳喷雾干燥工艺条件进行优化,并对喷雾干燥粉进行抗氧化活性分析.研究表明,当助干剂添加量7 g/100 mL、浓缩液浓度10%、进风温度220℃和进料速度14 mL/min时,喷雾干燥粉的出粉率高达29.87%.抗氧化活性分析中,发现其具有较好的自由基清除作用,并且DPPH自由基、羟基自由基及ABTS+自由基的清除率均随样品浓度的增加而呈现上升的趋势.In this study the Smilacina atropurpurea was used as material,extracted of soluble substances from Smilacina atropurpurea of ultrasound-assisted,the effect of the amount of the drying agent,the concentration of the material,the feed rate and the inlet air temperature on the powder extraction rate during the spray drying process,study the optimum spray drying process conditions were investigated by orthogonal test,and the spray drying powder was discussed.Antioxidant activity analysis was performed.Studies have shown that when the amount of dry agent added was 7 g/100 mL,the concentration of concentrated liquid was 10%,the inlet air temperature was 220℃,and the feed rate was 14 mL/min,the powder extraction rate 29.87%.In the analysis of antioxidant activity,it was found to have a good free radical scavenging effect,and the clearance rates of DPPH free radicals,hydroxyl radicals and ABTS+radicals all increased with the increase of sample concentration.
