摘  要:目的:研究经β-葡萄糖苷酶作用前后武当2号金银花茶挥发油成分的变化,为金银花茶的深加工提供思路及依据。方法:采用挥发油提取器分别提取武当2号金银花茶和β-葡萄糖苷酶处理花茶后的挥发油,应用GC/MS技术分析两组挥发油样品中的成分,以峰面积归一法计算化学成分的相对含量,并比较成分和含量的变化。结果:从武当2号金银花茶挥发油中共鉴定出49个成分,花茶经过酶作用后鉴定出54个成分,新增的6种化合物是3-[(2E)-2-戊烯-1-基]-1,2,4-环戊烷三酮、3-甲酯基-5-乙烯基吡啶、异喹啉、反式-3-己烯-1-醇、4-乙烯基吡啶和2-乙烯基-2-丁烯醛,减少的1种物质是月桂酸。酶解作用后花茶挥发油主成分的含量发生改变,其中酯类成分、醛类和醇类芳香成分含量相对增加,烷烃类成分含量相对减少。结论:武当2号金银花茶经过β-葡萄糖苷酶作用后,挥发性成分的组成和含量均发生变化,芳香品质有一定改善,为金银花的炮制加工提供了依据,也为花茶产品的深加工提供了参考。Objective To study the changes of volatile oil components of"WudangⅡ"Lonicera japonica teabefore and after treatment withβ-glucosidase,so as to provide ideas and basis for further processing of Lonicera japonica tea.Methods The volatile oil of"WudangⅡ"Lonicera japonica tea and tea treated withβ-glucosidase were extracted by volatile oil extractor.The components in the two groups of volatile oil samples were analyzed by GC/MS.The relative contents of chemical components were calculated by peak area normalization method,and the changes of components and contents were compared.Results A total of 49 components were identified from the volatile oil of Wudang II Lonicera japonica tea,and 54 components were identified after enzymatic action.The newly added 6 compounds are 3-[(2 E)-2-pentene-1-yl]-1,2,4-cyclopentanetrione,3-methyl-5-pyridine,isoquinoline,trans-3-hexene-1-ol,4-vinylpyridine and 2-vinyl-2-butenal.One substance that decreased is lauric acid.After enzymolysis,the content of the main components of the volatile oil of Wudang II Lonicera japonica tea changed.Among them,the content of ester components,aldehydes and alcohol aromatic components increased,and the content of alkanes decreased relatively.Conclusion After treated withβ-glucosidase,the composition and content of volatile components in Wudang II Lonicera japonica tea have changed,and the aroma quality has been improved to a certain extent.This study provides a basis for the processing of Lonicera japonica and a reference for the further processing of flower tea products.
