摘　　要：近年来养羊方式和饲喂草料发生变化,导致肉羊容易发生疾病,降低肉羊生产性能和羊肉品质,影响肉类安全。中草药能够促进肉羊生长发育,改善羊肉品质和风味,生产绿色安全食品。本文综述了中草药添加剂对羊肉常规营养成分、理化性状、氨基酸和脂肪酸含量、风味化合物影响的研究进展,旨在为生产优质安全羊肉提供参考。In recent years,the methods of raising sheep and feeding change a lot.It causes prone to disease,weakens the reproductive ability of sheep and worsens mutton quality,affecting the meat safety.Chinese medicinal herbs can promote the growth of sheep,improve the mutton quality as well as taste and produce green food.This article reviews the research progress on the effects of Chinese herbal medicine additives on the general nutritional composition,physical and chemical indexes,amino acid and fatty acid content,and flavor compounds of mutton,in order to provide a reference for the production of quality and safe mutton.
