摘  要:随着消费者对食品安全关注的增加,食品品质检测越来越重要。计算机视觉技术作为一种无损检测方法,具有快速、简便、制样少的优势,已广泛应用于食品大小、形状、颜色、表面缺陷、新鲜度等品质检测。该文简要陈述计算机视觉技术的原理,主要介绍国内外食品品质检测中计算机视觉技术的应用研究和发展状况。With the increase of consumers′ attention to food safety,the food quality detection is becoming more and more important,which is generally evaluated by considering their size,shape,color,visual defects,as well as freshness. As a non-destructive detection method,computer vision technology,with the advantages of rapid,easy to use and less sample preparation,has been widely used in the food quality detection. The purpose of this paper was to present the basic theories of computer vision technology,and its application research and development of computer vision technology in food quality detection at home and abroad.
