摘 要:我国是世界核桃主产国之一,栽培面积和产量稳居世界前列。随着种植业的飞速发展,人们对我国的核桃初加工产业提出了更高的要求。但核桃的初加工产业相对滞后,严重阻碍了我国核桃产业综合竞争力的提升。综述了我国核桃脱青皮与清洗、干燥、分级、破壳及壳仁分离等初加工技术及其装备的研究现状,提出了核桃初加工研究中有待解决的问题,旨在为我国核桃初加工机械化、标准化、产业化发展提供参考。China is one of the world’s main walnut production countries, which has the large part of cultivated area and yield of the world. With the rapid development of planting industry, higher requirements are put forward for the primary processing industry of walnut in China, but the primary processing industry of walnut is relatively lagging behind, which seriously hinders the improvement of comprehensive competitiveness of walnut process industry. The research status of walnut primary processing technologies and equipments are summarized, including peeling and washing, drying, classification and separating shell and kernel, and at the same time the problems which are urgent to be solved are also put forward, in order to provide references for the development of mechanization, standardization and industrialization of walnut primary processing in China.
