景德镇市售熟肉制品的微生物检验结果分析

摘  要:为了探究景德镇市售熟肉制品的微生物检验结果,本文选取2019年4月—2020年4月景德镇市售熟肉制品100份,普通消费者购买的熟肉制品36份,实施微生物检验。结果显示,136份熟肉制品中,84份检测合格,合格率为61.76%。不合格样品共有52份,分别为大肠菌群47份,占不合格样品比例为90.38%;菌落总数18份,占比为34.62%;1份致病菌超标,占比为1.92%。在100份监督样品中,合格率为63.00%,36份监测样品中,合格率为58.33%,检测合格率对比差异无统计学意义(P>0.05)。通过对景德镇市售熟肉制品的检验发现,景德镇市售熟肉制品整体检测合格率处于较低水平,有关部门应切实加强管理力度。In order to explore the microbiological analysis of cooked meat products sold in Jingdezhen,this paper selects 100 cooked meat products sold in Jingdezhen from April 2019 to April 2020 for microbiological test.The result shows that of the 136 cooked meat products,84 are qualified,and the qualified rate is 61.76%.Among them,there are 52 unqualified samples,the amount of coliform bacteria is 47,accounting for 90.38%of the unqualified samples,the amount of bacterial colonies is 18,accounting for 34.62%,and 1 pathogen bacteria exceeds the standard,accounting for 1.92%.Among the 100 monitoring samples,qualified rate is 63.00%,and 58.33%in 36 monitoring samples.There is no statistical difference in the qualified rate(P>0.05).Through the inspection of cooked meat products sold on the market in Jingdezhen,it is found that the overall inspection pass rate of cooked meat products sold on the market in Jingdezhen is at a low level,and relevant departments should strengthen their management.
