摘  要:以柚皮为试材,分别研究了超声波辅助提取法单因素(提取时间、乙醇浓度、料液比)及碱提酸沉法单因素(提取时间、料液比、提取温度)对柚皮中黄酮类化合物提取率的影响。通过正交实验优化提取工艺,同时对提取的总黄酮进行清除亚硝酸盐和抗氧化实验。结果表明,碱提酸沉法提取的总黄酮量高于超声波辅助提取法,影响其提取率的因素依次为提取时间、料液比、提取温度,研究所得最佳工艺条件:提取时间1.5 h,料液比1∶25 g/mL,提取温度60℃。碱提酸沉法的柚皮黄酮的亚硝酸盐清除作用和抗氧化作用优于超声波辅助提取法。The effects of single factor(extraction time,ethanol concentration,material-liquid ratio)of ultrasonic assisted extraction method and single factor(extraction time,material-liquid ratio,extraction temperature)of alkaline extraction and acid precipitation method of the extraction rate of flavonoids in pomelo peel were studied,the extraction process was optimized by orthogonal experiment by using the optimal conditions of total flavonoids extract to remove nitrite.Results showed that the alkali mention acid sinking method compared with ultrasonic assisted extraction rate was high,the high yield of alkali,acid sinking method of extracting total flavonoids pomelo peel extraction yield factors were as follows:extraction time、material-liquid ratio、extraction temperature,the optimum technology of extracting temperature was 60℃,extracting time was 1.5 h,solid-liquid ratio was 1∶25 g/mL.The nitrite scavenging and anti-oxidation of total flavonoids by the alkali mention acid sinking method were superior to ultrasonic assisted extraction.
