摘  要:为研究猴头菇营养生理变化规律,以棉籽壳为主料栽培猴头菇,并在其生长发育的不同时期测定其8种胞外酶活性。结果表明,猴头菇的生物学效率达70%,具有完整的胞外酶系,胞外羧甲基纤维素酶(CMC酶)、果胶酶、滤纸纤维素酶(FP酶)和半纤维素酶(HC酶)在子实体的生长发育期具有活性高峰;淀粉酶和果胶酶在菌丝生长阶段酶活力较高;过氧化物酶在菌丝生长期活性较高,在子实体成熟期活性最低;猴头菇在采摘后,大多数胞外酶活性呈下降趋势。Hericium erinaceus were cultivated with cottonseed hull as the main material. Eight kinds of extracellular enzymes activities of the H. erinaceus were measured at different stages of its growth and development of the H. erinaceus. The results showed that the biological efficiency of H. erinaceus was 70%. It had complete cellulase system. Extracellular carboxymethylcellulase(CMCase), pectinase, filter paper cellulase(FPase) and hemicellulase(HCase) had the highest activity during the growth and development of fruiting body, and amylase and pectinase had higher activity during the mycelial growth stage. The activity of oxidase was the lowest at the full bagging stage of hyphae, and the overall activity of oxidase decreased. Most of the extracellular enzymes decreased after picking.
